It’s Valentine’s Day!
It’s 7pm and you’re meeting bae in an hour. You either don’t have a gift or you’re feeling like its not good enough. Maybe it’s not personalized, you didn’t make it yourself, or spend enough, all you can do is worry.
Or maybe you don’t have a bae (ME) and you and your Galentine are looking for something fun to do, or eat tonight. Either way, I have the best idea for you!
My absolute favorite cookie in the world are these shortbread cookies. They are somehow soft and crumbly crisp at the same time, they’re incredibly easy to make, and can be dressed up with frosting or eaten just as they are.
Shortbread is the basic cookie, you don’t need a lot of ingredients or time, but if you do want to get extra with it, you can whip up some icing or cut them into fun shapes.
These are also Ashley’s favorite, the mother of the most perfect and chunky littlest brother a sister could ask for. I made them for her when Jett was born, and have therefore dubbed them Jett’s Shortbread. Take a look at this recipe for cookies just born for love!
- ½ cup corn starch
- ½ cup powdered sugar
- 1 cup flour
- ¾ cup butter (softened)
- Mix corn starch, powdered sugar and flour.
- Cream butter and mix dry mixture in to form smooth dough
- You can either roll into balls and flatten into circles with the bottom of a cup, or you can roll out the dough and cut out shapes.
- Bake at 300 degrees for 15-20 min
Whip up some frosting or bring out the sprinkles and decorate to your heart’s desire! Tag me in your creations on instagram!
